It’s that time of year again when the weather gets cold, the flannel comes on, and it’s time for a delicious taste of Illegal Pete’s Green Chile. Here at Illegal Pete’s, we know how nice it is to visit an old friend during the holidays, and that’s why we're excited to reintroduce our classic Green Chile Burrito as our featured LTO.

This classic burrito is a perfect way to enjoy our signature Pork Green Chile- the ultimate cold-weather ingredient. Featuring roasted Hatch Green Chilies, jalapeno, onion, garlic, tomato, and warming spices – our green Chile is a loving homage to all things Colorado green Chile. It has just the right amount of spicy kick, with all the savory roasted and toasted flavors you come to think of when you are hankerin' for some proper green chile. We take our beloved green Chile and use it to glaze perfectly roasted chunks of hand-diced pork. Each piece of pork is like a mini glazed pork chop, that is perfectly spiced, browned,and coated in Illegal Pete’s green chile.

Here at Illegal Pete’s, we're passionate about all things burritos, and that’s why we have partnered with Colorado Tortilla Company for more than 20 years to make sure each of our burritos has the right stuff. All our tortillas and chips are vegan and feature all-natural ingredients made right here in the Front Range.

Our classic cilantro-lime rice base adds just the right amount of acidic twang to the base of your green chile burrito or bowl. With all the warm, savory chile and creamy cheese + sour cream, the cilantro lime rice adds just the right amount of acidity and herbaceous freshness to each bite of our Green Chile Burrito.

Mixing with our cilantro lime rice is our overnight braised Pinto beans. Our pinto beans are slow-cooked overnight with onion/jalapeno and spices and have a delicious creamy center, mixing well into any burrito or bowl, but we particularly love them with our Green Chile Burrito.

This throwback Green Chile Burrito also features one of our favorite proteins in the group- Our overnight braised beef barbacoa. Using rib cap lifter beef cuts, our barbacoa recipe is slowly cooked overnight with more Hatch green chilies, chipotle chilies, potatoes, tomatoes, and a house blend of spices. Our barbacoa tastes rich with the beefy umami flavors we love, melts in your mouth, and feels like a home-cooked meal all wrapped up in a mighty burrito.

While our Pork Green Chile has that perfect balance of savory heat, here at Pete’s, we know that a good helping of Chile just isn’t the same without some cheesy, creamy goodness on top to balance each bite just how it should be. Our green Chile burrito includes our signature blend of Oaxaca + Sharp Cheddar cheeses, with a dollop of Daisy Sour cream.
